Our maple syrup is produced in a food allergen free sugarhouse.

Below is the grading system for pure maple syrup.  Please note that one of the factors for grading maple syrup is the light transmittance which has a range for each grade.  This can play a factor in when you buy a jug of let's say Amber Rich it can vary in color within it's own grade.  These standards were set by the IMSI (International Maple Syrup Institute):

Golden Color/Delicate Flavor  (Vermont Fancy):  Range 75.0 - 100.0 (% Transmittance)

Usually made at the beginning of the new maple season. Pour over vanilla ice cream for a Vermont maple sundae.

Amber Color/Rich Flavor  (Compares well to the former Medium Amber):

Range 50 - 74.9 (% Transmittance)

Usually made about mid-season and seems to be the most popular for all around use. A good choice for gifts.

Dark Color/Robust Flavor  (Compares well to the former Grade B):

Range 25.0 - 49.9 (% Transmittance)

As the maple season progresses, the syrup darkens in color and develops a more robust maple flavor.  With the warmer temperatures, there is more natural bacteria that causes this process to darken and become stronger flavor.  Good for all around use, its hearty flavor is a great choice for all kinds of recipes. Pour over baked apples or squash, use as a glaze for meats and vegetables.

Refrigerate after opening for best storage. Prior to opening, keep in a cool place and out of high temps and sunlight. You can also store in your freezer for long term storage and just pour out some delicious maple syrup into a smaller container you keep in your fridge to keep it fresh and long lasting.
